Fresh x Raw x Living x Fruit Pie
For a couple days I’ve been a bit sick n’ sniffly. It’s not often but when it happens especially in the summer I’m bummed. Gotta go with natural healing via green juice and fresh foods. Today I made a mango x strawberry raw pie w/ mint, kiwis, banana, coconut and a cherry. It’s crazy easy to make and hella tasty. It’s also cheap so all you $ owls out there relax and eat some fresh fruit.
Ingredients
1 banana
1/2 mango
1/2 handful of fresh mint
2ish heavy finger pinches of grated coconut (try to use the non sweetened, dehydrated kind)
1 kiwi
1 cherry
3 strawberries
1/2 tbsp agave syrup (if you don’t want the extra sweetness just omit this as the fruits are def sweet enough)
Equipment
food processor (but you could really mash it by hand)
miny lil tart pan
knife
Blend the mango, mint (save a sprig for decoration), 2 of the strawberries and the agave syrup.
Take your tart pan and mash the banana into the bottom and along the side. I’m like a 2 yr old in the kitchen sometimes so I do it with my fingers but you could do it with a utensil. Try to make it as even as possible.
Dust the nana mash with some grated coconut.
Slice the 3rd strawberry into thin vertical slices. Place them along the edges of the tart pan making sure to push the bottoms of the strawberries into the nana mash.
Pour your mango x strawberry x mint pudding type mix into the middle of the pan.
Cut the kiwi into 4 thin slices and lay across the top of the pie.
Add the cherry and decorate with the rest of the coconut.
Last, place it in the freezer for a few hours to let it set up. Honestly most of the time I never wait that long, so I end up with a partially set pie slice but whatevs cuz I’m bout ta eat heaven.
Be creative, free and at peace when you are making food. Decorate however you want. Share with your lover, friend or eat it all up and feed your lovely body.
